Big River Lodge and Executive Chef Scottie Burton invite you to join us at our 2003 Food & Wine Cooking Schools. Our schools offer personalized attention and a curriculum designed to accommodate a variety of culinary interests and skill levels. Classes combine hands-on instruction and classroom demonstration to provide each student with a fun and rewarding experience.
COOKING SCHOOL OBJECTIVES
• Provide a fundamental understanding of knife skills; cooking techniques such as braising, roasting, grilling, steaming and saute; food theory including the composition of flavors, textures and ingredients; and how they work in concert to create the perfect meal.
• Provide a basic knowledge and appreciation of wine and its optimal pairing with various foods.
• Provide instruction in classic international cooking techniques that offer deeper understanding and appreciation of cuisine cultures.

RATES: $2500 per person
