The Institute for Culinary Awakening is an educational organization dedicated to the teaching and preparation of Organic, Plant-Based Cuisine. I.C.A. offers custom programs in Vegan Culinary Arts for individuals, businesses and food professionals alike. These programs focus on Seasonal, Sustainable, Farm-to-the-Table Cuisine in a fun, creative and empowering manner. Whether for personal wellness or professional business expansion, I.C.A. offers ways in which to expand your organic, vegan (cooked and raw) repertoire. Background Data
Schedule & Fees July 5-29, 2005; 20 Day Vegan Culinary Arts Program; Portland, Oregon. This 20 Day program includes informational lectures, an outing day to an organic farm, culinary supply store and health food co-op and hands-on learning in the Chef's Kitchen. This 100 hour program includes tea, smoothie and one vegan meal daily; a binder with recipes and relevant information; Chef Al's "Layers of Flavors" cookbook; a marketing segment; and a Certificate of Completion from I.C.A. Students must be motivated to learn more about this cuisine but need not be vegan or vegetarian to attend. Discounts apply for groups of two or more and college students. Facilities Chef's Professional Kitchen or your site for consultations. Admission Requirements Students must be motivated and ready to learn about Vegan Cuisine. Good knife skills are helpful but not necessary. Faculty Chef Al Chase is a 1979 graduate of the Culinary Institute of America; a 2002 graduate of Living Light Culinary Arts Institute. Chef Al has over 30 years in the food business and for 15 years he has been vegan.
