School Introduction

I run four week, hands-on residential cookery courses from a beautiful converted watermill in Somerset, UK.

My courses are designed as vocational training for those who want to cook for a living, most often on yachts in the Mediterranean and Caribbean, or as Chalet chefs in the Alps, although anyone who wants to improve their cooking skills is welcome. I teach in small groups of no more than five to a class.

These are much more than beginners' courses. We start with the essential skills and basic techniques for all recipes. As knowledge and confidence grow we introduce more techniques, including jointing, filleting and boning, as well as yeast cookery and advanced pastries and sauces. We also visit markets and go shopping for fresh produce.

By the end of the course you'll feel confident producing super tasting, top-class food even under pressure, and will have learnt plenty of rescue remedies and shortcuts.

I run seven courses per year.

As of March 2006 my fees are £2,700 (GBP) per student , rising to £2,850 in September.

Dates for 2006 courses are as follows:

September 4 - 29
October 9 - November 3

The course fee includes tution Monday to Friday for four weeks, all meals and accommodation for the duration of the course, informal wine tastings and the Foundation Certificate in Food Hygiene. There are no hidden extra costs, the only extra being a single room supplement of £50 per week.

Facilities

Large, well equipped, farmhouse-style kitchen with AGA, Neff appliances and separate preparation area.

Admission Requirements

Enrolment is restricted to students over the age of 18 years, except by special arrangement. Due to the small size of classes course is not suitable for vegetarians or those requiring special diets.

Faculty

Rosie trained at Oxford in Catering and Hotel Management. Before she came to teaching her wide ranging career took in cooking in a number of restaurants, running her own catering business and writing and editing recipes for publication.

Her teaching career spans more than 20 years, during which she was head of cookery at Redlynch Park College and later senior tutor at Cookery at the Grange. She has been running her own cookery courses from her home for ten years.
