School Introduction

Organic Tuscany is an Italian Cooking School that offers week-long organic cooking courses. The program Includes visits to local organic farms, cooking classes using organic ingredients, olive oil and wine tastings and tours of Siena, Florence and San Gimignano. The courses are “from farm to table”: taking you to see where the fresh, local organic food we buy is grown and using it to cook traditional Tuscan and Italian recipes. Classes are taught in English, but you will acquire a smattering of culinary Italian. Local chefs will guide you through the preparation of simple but delicious dishes (from Tuscany and from other Italian regions) and reveal some of their culinary secrets. Groups are small (maximum 8 people), so that everyone gets a chance to try their hand at every technique, from making fresh egg pasta dough to lovingly stirring an artichoke risotto to perfection. Three of the cooking courses are vegetarian.

Faculty

Shilpa:
All her spare time when she was in her teens was spent working and learning to cook at Casa Nostra, a family-run gourmet Italian restaurant in Oxfordshire. After obtaining a degree in French and Italian language, literature and culture from the University of Cambridge, and living in Italy, in both Florence and Rome, she moved to Barcelona, Spain, where she worked as a chef at Sesamo, an Italian-owned vegetarian organic restaurant, and then set up her own successful restaurant, Mosquito.
When their daughter Luisa arrived, she and Riccardo moved back to Italy to start Organic Tuscany. She is a member of the Slow Food association.
