School Introduction

I run intensive 4 week courses designed for those who want to be a confident and competent cook in a yacht galley or a ski chalet, or who simply want to set themselves up with some great skills for life.

Many attendees are beginners , but some just need updating on everything from essential techniques through to classy presentation which would be welcome in the best restaurants. In the busy sessions we cover a huge range of techniques, as well as many different styles including Thai, Indian and Italian. You will visit butchers and fishmongers as well as selecting vegetables from the garden, all with the objective of knowing how to source great ingreadients which result in great food. Classroom time is essential but kept to a minimum, ensuring that you spend the maximum possible time putting your new skills into practice before you leave.

My Somerset longhouse will be your home for the month with everything you need provided. With a maximum class size of six you will get plenty of individual help to ensure that you go away inspired and ready to face whatever challenge you are moving on to.

Four week Foundation Courses start from £3,250

Courses are run at various times throughout the year designed to fit in with the ski season and yachting calendar.

Facilities

Teaching kitchen, dining area, student sitting room with TV and DVD, accomodation in a variety of twin and single ensuite rooms.

Admission Requirements

18 years of age and over.

Faculty

Lou Huttton has been running Food of Course for 8 years, prior to which she was Principle Teacher at The Grange. She has extensive experience in food and catering from running her own catering business, hotels, and chalets around the world.
