School Introduction

The culinary academy is the leading centre for culinary excellence in South Africa.
We are situated on the Backsberg Wine estate outside Paarl in the Cape Winelands area.
We offer a full-time 15-month advanced chef diploma in food & wine.

The course consists out of a 7-month full-time practical period at the school premises, followed by a 6-month in-service period at one of the top restaurants within the Cape Town area.
Subjects covered are as follows:
Cooking, History of Food, Management, Wine Diploma, Food Technology, French, Nutrition, etc.

Our course fees are all inclusive.
This includes the following:
Knives, Uniforms, Books, Wine Diploma, All ingredients required for daily cooking practicals, First-Aid, Fire Fighting, Outings.

Facilities

The TCA facilities are extensive and include:
Demonstration Kitchen, Practical student kitchen, Lecture rooms, Library, Dining room, Recreation room.

Admission Requirements

Senior School Diploma and a passion for cooking.

Faculty

The Chef Lecturers are maid up out of two highly qualified and experienced chefs with many years of industry related experience.
They are as follows:
