De La Tierra cooking school is located in the quiet neighbourhood of Guadalupe Victoria, Oaxaca, Mexico. Sharing a beautiful space with La Villada Inn, an award winning ecologically constructed lodging, De La Tierra offers a special experience in a charming environment. The school is run by internationally experienced Australian chef, Travis Harvey and his partner, Karin Ferguson. Travis' recipes and knowledge of Mexican cuisine come from years of living in Central America and a lifelong fascination with Mexican food and culture. Oaxacan recipes and techniques have been passed on to him from many sources but foremost Doña Juli Sibajai, Dueña of La Villada Inn. Background Data
Schedule & Fees De La Tierra offers both Mexican and International cooking programs. Half day lessons conclude in an evening meal set against sweeping views of Oaxaca's mountain ranges at La Villada Inn. Classes begin at 1pm with a tour of the Sánchez Pascuas market to give first hand knowledge of a variety of Mexican produce (optional). This is followed by an introduction to Mexican food accompanied by regional speciality pastry and Oaxacan hot chocolate.
